Poultry Marinade 🐔

1 whole chicken cut into 8 or 10 pieces,
OR  12 thighs, OR, 1 spatchcocked chicken
OR 12 chicken cutlets

1/2 small yellow onion
12 cloves of garlic
zest & juice of 1 lemon
2 tbsp red wine vinegar
1 tsp salt
1/2 tsp black pepper
1 jalapeño
1/4 cup packed herbs
2 tbsp olive oil

Marinade

In food processor, add all the ingredients and process. Blend until herbs are finely chopped.

Pour marinade over chicken and cook within 10-15 minutes.

Bone-in chicken

Set grill pan to medium-low heat and allow to get hot. Add chicken to the pan. You will know the chicken is done when it pulls of easily from the grill pan (20-30 min.).

Cutlets

Grill for 2-3 minutes on first side and 1-2 on the second on medium high heat.
