
Ingredients:

7 tsp yeast
2 cups warm water
1 cup sugar
11/2 cups oil
8 cups flour
2 tsp vanilla sugar/extract
4 egg yolks
1/2 teaspoon salt
Cinnamon Filling:
1/2 cup brown sugar
1/4 cup sugar
4 teaspoons cinnamon
Vanilla Filling:
11/2 cups sugar
1/4 cup vanilla sugar
Directions:
In the bowl of a stand mixer, mix the yeast, warm water, and sugar. Let proof for 5 minutes.
Add remaining ingredients and knead for 10 minutes.
Allow dough to rise for three hours at room temperature or overnight in the fridge.
Preheat oven to 375 degrees
Roll dough into a circle (about 1/8 inch thick), brush with oil, and fill with desired fillings
Cut dough (like a pizza) into triangles and roll one triangle at a time, beginning at the wide side and ending at the point.
place rugelach, point side down on a parchement lined baking sheet.
Optional: Brush with milk or egg before baking
Bake until golden brown (about 20 min)
