Ingredients:
- 3/4 c Oil
- 1/2 c Brown Sugar
- 1/2 c White Sugar
- 2 Tbs Maple Syrup (not pancake syrup)
- 2 Tsp Vanilla Extract
- 2 eggs
- 2 1/4 c Flour
- 1 tsp Baking Soda
- 1 tsp baking powder
- 1 tsp Salt
- 1 c Toasted Pecans-chopped
Glaze:
3/4 c confectionary sugar
1 tbs maple syrup
1-3 tbs milk
Directions:
Preheat Oven to 350 degrees
In a mixing bowl, whisk together oil and sugars.
Add eggs, one at a time, whisking between each egg.
Whisk in vanilla extract and maple syrup.
Add flour, baking soda, baking powder, and salt, and stir with a large spoon until combined
Stir in toasted chopped pecans
Scoop tablespoon-sized scoops of cookie dough onto a parchment-lined baking sheet
Optional- Top with more chopped pecans, pressing them into the dough.
Bake for 10 minutes until the edges are just browned
Let cool, then drizzle with maple glaze.
