BEST PASSOVER RECIPE – CHOCOLATE CUPCAKES WITH HARD CHOCOLATE FROSTING AND WHIP CREAM!

CUPCAKES:
3/4 C potato starch
1 1/2 tsp baking powder
1/2 tsp salt
3/4 tsp baking soda
1 tsp vanilla
1/2 C cocoa
1 1/2 C sugar
2/3 C oil
3/4 C coffee = 1 tsp coffee + 3/4 C hot water
2 eggs

Mix eggs and sugar in mixer. Add oil and coffee and then dry ingredients. Bake at 350 for 25 minutes.

CHOCOLATE FROSTING:
3/4 C confectionery sugar
4 tsp cocoa
2 tsp hot water
1 – 1 1/2 tsp oil
Whisk in a bowl and spread on cooled cupcakes.
