Grilled Eggplant Greek Salad Recipe

Cube and saute eggplant, red onion, zuchini, mushrooms until just cooked.

Assemble in salad bowl lettuce, cherry tomatoes, parmegian cheese and sauteed vegetables.

Dress with olive oil (or a spray of Pam), red wine vinegar, balsamic vinegar, fresh garlic, salt, pepper.
