An Italian Delight Full of Vegetables and Colorful Ingredients!
INGREDIENTS:
- 2 Stalks Celery, Chopped
- Fresh Parsley, Chopped
- 1 Can Crushed Tomatoes
- 3 Carrots, Chopped
- 1 Chopped Leek
- 5 Chopped Plum Tomatoes
- 2 Green Squash
- Frozen Corn, Beans, Peas, and String Beans
- 2 Chopped Onions
- 5 Cloves Garlic
- Salt, Pepper, Oregano, Basil
- Water
DIRECTIONS:
Saute all the fresh vegetables, frozen vegetables, and garlic. When the vegetables are tender, add crushed tomatoes and water. Stir until combined. Season with salt, pepper, oregano, and basil to your preference. Cover and simmer over low heat for one hour. Add chopped parsley as a garnish when serving.
