My Mom’s Linzer Cookies🍒

Ingredients:

  • 1 lb Crisco + 1 oz Margerine
  • 1 2/3 C Sugar
  • 3 Eggs
  • Zest of 1 Lemon
  • 1 Tbs Vanilla
  • 5 C flour

Directions:

In a bowl of a stand mixer, combine Crisco, margarine, and sugar and beat until light and fluffy

Add eggs one at a time, beating in between

Add lemon zest, and vanilla extract and stir to combine,

Slowly stir in 5 cups of flour.

Place the dough in the fridge for 30 min-1 hour

Divide dough into 4 parts, roll dough into a thin sheet and cut into circle cookies. Punch a hole out of half of the cookies for the top of the sandwich. Bake at 350 degrees until just browned about 8-10 min. Let cool.

Spread seedless jelly on the bottom cookies, dust powdered sugar on the top cookies, and then assemble.
