Heat lightly oiled pan. Sear each steak in hot oil and then remove from pan. Slice a large onion and several cloves fresh garlic (one onion for every six steaks). Brown onion and garlic for 10-15 minutes. Lay seared steaks on top of onion, sprinkle with salt, garlic, pepper, reduce heat to low, cover very tightly and simmer for 2 hours. (After two hours if there’s liquid in the pan, raise flame until liquid evaporates and steaks have a nice shine.)
