Ingredients
- 1 cup+ 2 Tbsp oil
- ¾ cup cocoa powder
- 1 tsp instant coffee granules
- 2 teaspoons vanilla extract
- 1 cup light brown sugar
- 1 cup granulated sugar
- 2 large eggs (room temperature)
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups semi-sweet chocolate chips
Directions:
In a bowl of a stand mixer, combine oil with the cocoa powder,coffee, and vanilla extract and stir it until it’s smooth and combined.
Add in the brown sugar and white sugar and mix at medium speed with the paddle attachment until light and fluffy, about 2 minutes.
Next, add in the room temperature eggs while mixing on low, letting each mix in fully before adding the next.
Mix again on medium speed for 1-2 minutes until it’s light and airy.
Scrape the bowl.
While mixing on low, add in the flour, salt, baking soda, and chocolate chips.
Next, mix the dough just enough so that it’s combined.
With a cookie scoop, divide the dough into 2 Tablespoon-sized cookie dough balls and place eon a parchment lined baking sheet. Chill your cookies in the fridge for 30 minutes.
While cookies are chilling, preheat the oven to 350 degrees.
Remove the cookie dough from the fridge and slightly press each cookie with he palm of your hand. Bake the cookies for about 10 minutes, or until they are no longer shiny in the center and the edges are set.
Allow the cookies to cool and enjoy!
