Delicious and Savory Chicken Leg Recipe, Perfect for Weeknight Dinners! Recipe by @peaslovencarrots
INGREDIENTS:
- 20 Chicken Legs (No Skin)
Marinade:
- 1 Cup Mayonnaise
- 1 Tbsp Dijon Mustard
- 5 Cloves Garlic, Minced
- 2 Tsp Granulated Onion
- 1 Tbsp Dried Parsley
- 1 Tsp Kosher Salt
- 1 Tsp Coarse Black Pepper
- 1.5 Tsp White Vinegar
Breadcrumbs:
- 3.5 Cups Panko Bread Crumbs
- 2 Tsp Granulated Onion
- 2 Tsp Dried Parsley
- 1 Tsp Salt
- 1 Tsp Black Pepper
- Zest of 1 Lemon
DIRECTIONS:
Preheat oven to 350 degrees and generously grease a parchment lined baking sheet. Add all the marinade ingredients in a large Ziploc bag and mix thoroughly. Add chicken legs to the Ziploc and shake. Make sure that the chicken legs are evenly coated in the marinade and set aside.
Combine the breadcrumb ingredients in a separate large mixing bowl and mix thoroughly. From the Ziploc bag, remove one chicken leg at a time and place in breadcrumb mix, coating evenly. Place on baking sheet. Continue with the rest of the chicken legs.
Combine leftover breadcrumbs with the leftover marinade and sprinkle around the chicken on the baking sheet. Using a cooking spray, spray the chicken.
Bake for 45-60 minutes, until chicken is cooked through.
