Chicken Sweet Potato Soup 🥣

A healthy alternative for vegetable chicken soup!


  • 2 Chicken Breasts
  • 1 Tsp Seasoning Salt
  • 1/2 Tsp Olive Oil
  • 1 Large Onion, Chopped
  • 2 Celery Stalks, Chopped
  • 3 Garlic Cloves, Chopped
  • 1/2 Tsp Oregano, Thyme, & Cumin
  • 6 Cups Chicken Broth
  • 1 Large Sweet Potato, Diced
  • 3 Cups Chopped Kale
  • 1 Fresh Jalapeno, Sliced
  • 1/4 Cup Fresh Cilantro, Chopped


Season the chicken with the salt and set aside while you prep all your vegetables. Heat a large pot over medium heat, cook vegetables in oil until soft and golden, about 8-10 minutes, then add the garlic and dry spices and cook 2 to 3 minutes. Add the chicken broth, chicken, jalapeno, and cilantro. Cover and cook for 20 minutes, then add the sweet potato and kale and cook for 30 minutes until the chicken is cooked. Remove the chicken and shred. Return the shredded chicken to the pot, and discard the jalapeno  Enjoy!
