Roasted Plum Compote Sweetened With Honey – Perfect Yogurt Topping for a Healthy and Delicious Breakfast! Recipe by A Beautiful Plate
INGREDIENTS:
- 1 Lb ripe, firm Italian Plums, Halved and Pitted
- 1/2 Tsp Ground Cinnamon
- 1 Tbsp Honey
- 1 Tsp Vanilla Bean Paste or Extract
DIRECTIONS:
Preheat oven to 375 degrees with a rack in the center position. Place the plum halves cut-side up in a 2 quart baking dish (or a 8 inch square baking pan) and spread into an even tightly packed layer, keeping the plum halves in a single layer.
Sprinkle ground cinnamon over the plums and then drizzle the honey evenly. Bake for 15 minutes until the plums have softened. Gently toss with a spoon. Continue baking for another 5-15 minutes, until the plums are softy but still intact.
Set aside to cool and stir in vanilla paste/extract. The liquid will become more syrup-like in texture as it cools.
Compote can be stored in the refrigerator for up to a week. Serve on top of yogurt, ice cream, pancakes, waffles, and more!
